Try these great dip recipes just in time for a summer party


If you are like me, you’re always looking for something new to try. Some of my favorite dips are listed below.

Cucumber and onion dip
1 medium English cucumber, grated, with the juice squeezed out
1 cup onion, grated
6 ounces of cream cheese, softened
1/2 teaspoon of salt
A couple of dashes of hot pepper sauce
2 heaping tablespoons of mayonnaise
2 drops of green food coloring

If you do not have an English cucumber, cut a regular cucumber in half and use a spoon to scoop out the seeds. Grate the cucumber. Place grated cucumber in a paper towel and squeeze out as much juice as possible. Mix all ingredients in a mixing bowl. Refrigerate until serving time.

Hummus
I made this hummus with 2 pints of chickpeas that I had canned. I bet this already excellent hummus recipe could only be improved upon with the addition of chunks of roasted garlic.
2 15-ounce cans of chick peas, drained and rinsed
1/2 cup of extra virgin olive oil
2 tablespoons of lemon juice
2 tablespoons of fresh parsley leaves
2 cloves of garlic, peeled
1 1/2 teaspoons of salt
1/2 teaspoon of sesame oil
1/2 teaspoon of ground cumin
1/4 teaspoon of coarse-ground black pepper
1/4 cup of water

Combine all ingredients in a blender and blend until fairly smooth.

Green olive tapenade
1 cup of pitted green olives
4 teaspoons of extra-virgin olive oil
2 teaspoons of lemon juice
1 1/2 teaspoons of fresh basil, finely chopped
1 teaspoon of minced garlic
A dash of black pepper

Finely blend ingredients.
